It’s Easter weekend.
Which means one thing across homes in Tiptree, Colchester, and beyond…
Roast dinners are about to be served.
Big ones.
Overfilled plates.
At least one person falling asleep on the sofa afterwards.
It’s tradition.
But here’s the thing.
For something that’s meant to be comforting and familiar…
Roast dinners are weirdly controversial.
Everyone has opinions.
Strong ones.
Let’s start with the meat.
Some people swear by chicken.
Others won’t touch anything but beef.
And then there are those (correct, in my opinion) who will go straight for a lamb roast at Easter.
Turkey?
I’ll be honest… not for me.
That’s a Christmas-only situation, and even then it’s negotiable.
Then we move onto the sides.
Because this is where things really start to divide households.
Roast potatoes are non-negotiable.
But not just any roast potatoes.
They need to be:
- Crispy on the outside
- Fluffy on the inside
- Slightly aggressive in texture
If they’re soft all the way through… we need to have a conversation.
Parsnips?
Elite.
Slightly sweet, slightly caramelised… they deserve their place on the plate.
Stuffing is where people start getting creative.
Some keep it simple.
Others (again, correct) add sausage meat and turn it into something that could quite happily be eaten on its own.
No notes.
Now… Yorkshire puddings.
Technically, yes, they belong with beef.
Realistically?
They belong on every roast dinner plate ever created.
There is no valid argument against this.
You can have one.
Or you can have six.
We’re not here to judge.
And then… gravy.
This is not optional.
This is not “on the side”.
This is not “just a drizzle”.
This is a full commitment.
Gravy should be generously applied until at least one item on the plate is partially submerged.
Anything less is simply decoration.
Across Essex this weekend, kitchens will be busy.
Ovens on full.
Timers going off.
Someone shouting “it’ll be ready in five minutes” for at least half an hour.
And when it finally lands on the table… everyone will quietly judge everyone else’s plate.
Because no matter how you do it…
Everyone thinks their version is the right one.
